Breakfast:Protein shake with fruit. Mix 1 scoop of your chosen protein powder with non-dairy milk such as almond, oat or soya, or water and add some of your favourite fruit. Lunch: Sweet Potato Minestrone Soup. (serves 4) Chop 1 sweet potato, 2 carrots, 2 parsnips, 1 red onion, 1 swede and 1 garlic clove. Place in a pan and cover with 500ml vegetable stock. Add a pinch of turmeric, 2 basil leaves, a tin of tomatoes and 1 tbsp. tomato puree. Bring to the boil, add 50g gluten free pasta and simmer until pasta al dente.
Dinner: Mushroom Stroganoff (serves 4) Slice 2 red onions and fry in olive oil, add 1 garlic clove and 150g sliced shiitake mushrooms. Add 500ml vegetable stock, 1 tsp paprika and 1tbsp vegetarian Worcester sauce and simmer until the mushrooms absorb some of the sauce. Stir in 1 carton of soya cream, sprinkle a small bunch of chopped parsley on top and serve with steamed vegetables.
